This is not really Mom’s banana bread, but when I lived in
Texas I bought a big bag of overripe bananas for 10 cents with this
recipe on it. It was like going home, almost! The bananas should be very
ripe. Mom always told me that they could never be overripe. Black is
beautiful!
Ingredients
| 8 | Overripe Bananas | |
| 2 | cups | Sugar |
| 3 | cups | Flour |
| 4 | lg | eggs |
| 2/3 | cup | Butter |
| 2 | tsp | Baking Soda |
| 2 | tsp | Salt |
| Nuts (optional) |
Steps
Preheat oven to 350 F.
Cream sugar with butter.
Blend eggs, one at a time, into the sugar and butter.
Blend four, salt and baking soda and add to eggs.
Pour batter into greased and flour bread pans, abbout 2/3 full.
Bake for at least 1 hour until a tooth pick come clean.
