I don’t remember this dish as a kid, but it is very flavorful!
I found it in the same cook book as the pin wheel cookies: The
Modern Family Cookbook by Meta Given, 1953.
Serves 5.
Ingredients
| 4 | slices | Bacon |
| 1 | medium | Onion chopped |
| 1 1/4 | lb | Hamburger |
| 1 1/2 | tsp | Salt |
| 1 | #2 1/2 can | Tomatoes |
| 3/4 | cup | Uncooked rice |
| 1/2 | tsp | paprika |
Steps
Preheat oven to 350 F.
Cut bacon slices into small pieces (about 1/2 in. long).
Saute bacon in frying pan until cooked.
Remove bacon and pour off half of the fat.
Brown the onion in the remaining bacon fat.
Add hambuger and salt and cook until the hambuger is just turning grey.
Add tomatoes, cooked bacon and well washed rice, mix then turn into a greased casserole dish.
Cover and bake for about 1 1/2 hours or until rice is tender.
Add hot water if needed during cooking.
